  • 450g pkt mint and honey lamb kebabs

  • 2 x 400g cans brown lentils, rinsed

  • 250g baby roma tomatoes, cut into quarters

  • 1 small bunch flat-leaf parsley, leaves picked, coarsely chopped

  • ½ cup Greek-style natural yoghurt

How to make the Lamb Kofta & Lentil Salad

  1. Heat a barbecue grill or chargrill to moderate. Cook and turn lamb 10 mins or until browned and cooked. Transfer to a heatproof plate. Cover with foil. Rest 5 mins.

  2. Meanwhile, heat a large frying pan over high heat. Add lentils and 1 tbsp water. Cook and stir 2 mins or until heated. Remove from heat. Add tomato and parsley. Stir to combine. Season.

  3. Arrange lamb skewers over lentil salad. Serve drizzled with yoghurt.
