Chicken with Tomato, Rice & Pesto

Not your average chicken and rice!

  • 1.5kg whole fresh marinated chicken

  • 1 lemon, zest finely grated and lemon sliced

  • 400g pkt tomato medley

  • 420g pkt microwave wild and brown rice

  • 1/3 cup shop-bought coriander pesto

How to make the Chicken with Tomato, Rice & Pesto

  1. Preheat a barbecue with lid to moderate. Place chicken, breast-side down, on a chopping board. Using kitchen scissors, cut along each side of backbone. Discard backbone. Turn chicken, breast-side up. Using the palm of your hand, press down on breast to flatten slightly (butterfly). Run a finger between skin and flesh of chicken to create a pocket. Place lemon slices in pocket.

  2. Place chicken, breast-side up, on chargrill. Cook, covered, 30 mins. Add tomatoes to grill. Turn chicken. Cook, covered,

a further 10 mins or until tomatoes are tender and chicken is cooked. Transfer to a heatproof plate. Cover with foil and rest 5 mins. Cut into 8 pieces.

  1. Meanwhile, place rice in a microwave-safe bowl. Cover. Microwave on High 2 mins or until heated. Stand 1 min. Add tomato and zest. Season. Stir to combine.

  2. Spoon pesto into a small bowl. Serve chicken with tomato rice and pesto.
