Breakfast Burritos

The perfect breakfast for a gal on the go!

This breakfast burrito is perfect for a busy person, you can make them the night before and just grab and go in the morning.

Tip: add some mashed avocado if you want a little extra oomph.

Ingredients:

  • 400g can salt-reduced baked beans in tomato sauce

  • 4 eggs, at room temperature

  • 2 tbsp milk

  • ½ cup grated tasty cheese

  • 1 tbsp butter

  • 2 jumbo flour tortillas

  • 60g baby spinach leaves

  • 100g shaved leg ham

How to make the breakfast burritos:

  1. Place baked beans in a saucepan. Cook and stir over moderate heat 5 mins or until heated.

  2. Meanwhile, whisk eggs and milk in a bowl until combined. Stir through cheese. Melt butter in a large frying pan over low heat. Add egg mixture. Tilt pan to cover base and sides. Cook 2 mins or until golden brown and set. Turn. Cook a further min. Transfer omelette to chopping board. Roll up into a log. Slice.

  3. Microwave tortillas on Medium 15 secs or until heated and pliable. Place tortillas on plate. Top with spinach, ham, baked beans and omelette. Roll up tightly to enclose filling. Cut in half to serve.
