Step 1
Grease and line two large oven trays with baking paper.
Step 2
Place flour in a large bowl. Stir in oats, sugar and coconut.
Step 3
Melt butter and syrup in a small saucepan over a medium heat. Remove pan from heat. Dissolve soda in 2 tbsp boiling water in a small heatproof jug. Immediately stir into butter mixture until combined.
Step 4
Pour butter mixture over oat mixture. Mix well. Roll 2 level tablespoons of mixture into balls. Place about 5cm apart on trays. Slightly flatten.
Step 5
Cook in a 160°C preheated oven, 15-18 mins, or until golden brown. Cool biscuits on trays.
