Air fryer crumbed chicken

This air fryer crumbed chicken recipe is the perfect shortcut to a family favourite. The air fryer makes it easy to whip up a healthier version of a classic with minimal effort and maximum flavour. Ideal for busy weeknights or when you’re craving comfort food.

Ingredients

Method

Step 1

Cut butter in 4 equal pieces. Freeze 30 mins.

Step 2

Meanwhile, place a chicken fillet between two sheets of baking paper, flatten with a mallet until 1cm thick. Place on a plate and repeat with the remaining chicken fillets.

Step 3

Place breadcrumbs in a shallow bowl. Season with salt and pepper. Place a piece of butter in centre of each chicken fillet. Fold in sides then enclose tightly to form a log. Secure each with toothpicks. Brush evenly with mayonnaise then roll in the breadcrumbs.

Step 4

Lightly spray a 7-litre air fryer basket with oil. Place chicken in basket and spray generously. Air fry on 180°C for 20-25 mins until the chicken is golden and cooked through. Remove toothpicks from the chicken.

Step 5

Serve with steamed green beans.
