Step 1
Heat 1 tbsp olive oil in a large saucepan over medium-high heat. Squeeze sausage mince from casings and cook, breaking up mince, 5-6 mins or until browned. Add pasta sauce and 5 cups water. Cover, bring to the boil. Reduce heat to low. Simmer, stirring occasionally, 25 mins.
Step 2
Meanwhile, cut lasagne sheets in half lengthways, then crossways into 4-5cm-wide strips.
Step 3
Add lasagne sheets to soup. Season with salt and pepper. Simmer, uncovered, 2-3 mins or until tender. Stir in parmesan and basil. Serve this delicious one-pot lasagne soup immediately with extra basil and parmesan on top.
