Slow-cooked pork & lentil ragout

Ingredients

Method

Step 1

Toss pork in flour, shaking off excess. Heat an oiled, large flameproof casserole dish over a high heat. Add pork in three batches. Cook, turning for 4-5 mins. Remove.

Step 2

Add onion, carrot, celery and chilli to same dish. Cook, stirring for 4-5 mins. Stir in lentils, tomatoes, wine, vinegar and 1 cup water. Bring to boil. Return pork to dish. Cover with lid.

Step 3

Cook in a 160°C preheated oven for 30 mins, stirring occasionally. Remove lid. Cook for a further 25-30 mins until meat is tender and liquid has reduced.

Step 4

Sprinkle with parsley. Serve with mashed potato and broccolini.

TIP

When cubing meat for slow cooking, make the cubes about 4cm so they cook through evenly.
