Mexican rice & beans

A one-pan dish that’s perfect as a hearty side or an easy weeknight meal.

Ingredients

Method

Step 1

Heat an oiled, large non-stick frying pan over a medium-high heat. Cook onion and capsicum for 2-3 mins, until softened.

Step 2

Add oregano and spices. Cook a further 1 min. Stir in rice. Cook for 2-3 mins, stirring.

Step 3

Stir in tomatoes. Fill empty can with water and add liquid to rice. Season to taste. Bring to boil. Reduce heat to low and add kidney beans. Simmer, covered, for 15-20 mins, stirring occasionally, until rice is tender. Fluff rice with a fork.

Step 4

Top with coriander. Serve with corn chips, sour cream and lime wedges.
