Halloween meringue ghosts

Method

Step 1

Line two oven trays with baking paper. In a small, clean bowl, using an electric mixer, beat 4 egg whites until soft peaks form. Gradually add 1¼ cups caster sugar, one tbsp at a time, beating until sugar dissolves and the mixture is thick and glossy. Beat in 1 tsp each vinegar and vanilla. Using a large piping bag, fitted with a 1cm plain nozzle, pipe mixture into ghost shapes on tray.

Step 2

Cook in a 150°C preheated oven for 10 mins. Reduce oven to 120°C and cook a further 20-25 mins. Allow to cool in a turned-off oven, with door ajar to dry out.

Step 3

Attach brown mini M&M’s to form eyes, using a little melted white chocolate. Set aside until firm.
