Recipe: Cranberry chilli prawns with rice noodle salad

This satisfying salad is just the thing to share with family and friends on Christmas day. The grilled prawns are packed with protein, while the cranberry chilli prawn sauce is made with Craisins® 50% Less Sugar for an antioxidant hit.

Serves 4

Prep and cook time: 1 hour, 30 minutes

INGREDIENTS

16 whole green prawns, peeled, tails intact

1 tsp sesame oil

200g thick dried rice noodles

2 eschalots, thinly sliced

150g punnet cherry tomatoes, halved

1 Lebanese cucumber, halved and thinly sliced

1 cup mixed Asian herbs (coriander, basil, mint)

¼cup (35g) Ocean Spray® Craisins® 50% Less Sugar Dried Cranberries, chopped

Lime wedges, to serve

marinade & DRESSING

½cup (160g) Ocean Spray® Whole Cranberry Sauce

¼cup (60ml) soy sauce

Juice and rind of 2 limes

1 tbsp honey

¼tsp chilli flakes

METHOD

  1. For the marinade and dressing, whisk the cranberry sauce, soy sauce, lime rind and juice, honey and chilli flakes in a jug. Season with salt and pepper and mix to combine. Set marinade mixture aside. Place prawns in a large bowl and combine with ¼ cup marinade. Refrigerate for 1 hour to marinate. Reserve remaining mixture for dressing.

  2. Preheat chargrill or barbeque over high heat. Thread prawns onto wooden skewers through the centre lengthways, then brush with sesame oil. Drizzle with sesame oil. Place on the chargrill and grill for 2–3 minutes each side, or until charred and caramelised.

  3. Meanwhile, cook the noodles in boiling salted water for 3 minutes, or until tender. Drain and refresh. Place in a large bowl. Add the eschalots, tomatoes, cucumber, half the herbs and half the dressing and gently toss to combine.

  4. Arrange prawns and noodle salad on a platter. Top salad with remaining herbs, scatter over Craisins® and drizzle with remaining dressing. Serve with lime wedges.

INGREDIENTS

2 cups (500ml) boiling water

2 green tea bags

1 litre Ocean Spray® Light Cranberry Classic TM, chilled

2 cups (500ml) clear apple juice, chilled

1 red and green apple, thinly sliced

1 small lemon, thinly sliced

Mint sprigs, to serve

1 cup ice, to serve

METHOD

  1. Place the water and tea bags in a heat proof jug and set aside for 10 minutes to brew. Remove and discard tea bags. Chill tea.

  2. Combine tea, Ocean Spray® Light Cranberry Classic TM and apple juice in a large jug. Add apple and lemon slices and mint sprigs. Add ice to serve.
